01. MY COMFORT BAKE IS A CHOCOLATE CAKE w/ VANILLA BUTTERCREAM

and sprinkles (I’m not a monster). The balance of rich and creamy with that colorful crunch is just simple perfection.

02. MY BAKERY TEST IS A PAIN AU CHOCOLAT

I met a chef in Italy while I was doing a culinary course in Calabria who said his restaurant test, to see if it’s up to snuff, is a spaghetti bolognese. It was then I realized I too have a test, but for bakeries. If you’re selling a pain au chocolat, aka a chocolate croissant, I’m going to test it and it better be good.

03. I FEEL MOST AT EASE IN THE MOUNTAINS (bonus if there is water nearby)

It took me four years of living in NYC to realize that nature and fresh mountain air are my bffs. Whether I’m hiking (moderate trails let’s be for real) or just sitting on a front porch with a mug of tea, those crisp peaks are my vibe.
