Chocolate Chip Waffles for One (No Eggs!)

An easy single-serve chocolate chip waffle perfect for a breakfast for one, when you’re craving something homemade and a little sweet. Bonus points, this recipe doesn’t require any eggs!

Equipment

  • Mixing Bowls
  • Spatula
  • Measuring Cups
  • Measuring Spoons
  • Waffle Iron
  • Fork

Ingredients

  • 1 ½ tbsp water
  • 1 ½ tsp ground flaxseed
  • ¾ cup flour
  • 1 ⅛ tsp baking powder
  • tsp salt
  • ½ cup milk dairy-free works!
  • 1 ½ tbsp canola oil
  • 1 tbsp semi-sweet chocolate chips

Instructions

  • In a small dish, mix your ground flaxseed and water. Set aside and let sit for 5 minutes
  • In a separate small bowl, combine your flour, baking powder, and salt. Then mix in your milk, oil, and flaxseed mixture. Stir until just combined
  • Plug in your waffle iron and get it hot
  • While your iron is heating, give your chocolate chips one to two quick chops on a cutting board, just to break them down a little. This will give you extra chocolatey goodness throughout your waffle
  • When your iron is hot, grease it if needed and then pour half of your waffle mixture into the center of your iron and sprinkle with half of your chopped chocolate (including any small bits!). Reserve a little of your batter to lightly cover the bigger bits of chocolate, so you don’t get chocolate all over your iron. Close the lid and allow to bake until done
  • Remove the waffle with a fork, place it on a plate, and repeat with the second half of your batter
  • Serve as is or with fresh fruit and enjoy!
