This easy small apple cake recipe bakes up two soft mini cakes filled with fresh apples, warm spices, and a cream cheese drizzle on top. Perfect for toaster oven baking or a small batch dessert craving!

Ingredients

CAKE
  • ½ cup Honeycrisp or Granny Smith apples thinly sliced and halved
  • 1 tsp light brown sugar
  • ¼ tsp ground cinnamon
  • 2 tbsp granulated sugar
  • 1 tbsp light brown sugar
  • 2 tbsp unsalted butter melted
  • 1 egg yolk
  • 1 tbsp milk
  • ½ tsp vanilla extract
  • cup all-purpose flour
  • ¼ tsp baking powder
  • tsp salt
  • ¼ tsp ground cinnamon
  • Dash nutmeg
CREAM CHEESE DRIZZLE, optional
  • 1 tbsp cream cheese softened
  • 1 tbsp powdered sugar
  • tsp vanilla extract
  • 2 tsp milk

Instructions

  • Grease two 6-oz ramekins and preheat your toaster oven or regular oven to 350°F. Heat your toaster oven for at least 10 minutes before baking to make sure it’s hot enough!
  • In a bowl, toss the halved slices of apple with 1 teaspoon of brown sugar and ¼ tsp of cinnamon. Set aside while you prepare the batter
  • In a bowl, whisk together the granulated sugar, 1 tablespoon of brown sugar, melted butter, egg yolk, milk, and vanilla until smooth
  • Then sift in the flour, baking powder, salt, ¼ teaspoon of cinnamon, and nutmeg, whisking in until you see just a few streaks of flour left
  • Save 10 apple halves for the top of your cakes, then gently fold the rest of your apples into your cake batter
  • Spread the batter into the prepared ramekins in an even layer. Fan the remaining reserved apples over the top
  • Place on the rack of your toaster oven and bake for 25–30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs
  • Let the cakes cool for at least 15 minutes
  • For the cream cheese drizzle, in a bowl, smear together the softened cream cheese and powdered sugar until combined. Then whisk in the vanilla and milk until smooth
  • Drizzle over the warm cakes and enjoy

Notes

*These cakes can be made in a regular oven or a toaster oven. They might bake a little faster in a regular oven, so begin checking with a toothpick for doneness around the 20-minute mark to avoid overbaking.
