These small batch sugar cookie bars are soft, buttery, and bake easily in a loaf pan, perfect for when you want a quick homemade treat without a full batch. Oh, and topped with plenty of colorful sprinkles!

- ½ cup unsalted butter room temperature
- ½ cup granulated sugar
- 2 tbsp powdered sugar
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups flour
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp granulated sugar
- ⅓ cup sprinkles
Add your room temperature butter, ½ cup granulated sugar, and powdered sugar to a large mixing bowl and beat for 2 minutes, until light and fluffy
Add in your egg and vanilla and beat until combined
In a separate bowl, whisk together your flour, baking powder, and salt. Then add to your wet ingredients and mix until just combined. If the dough seems crumbly, use a spatula to smear the dough together until it forms
Line a 9x5 loaf pan with parchment paper and press your cookie dough evenly into the bottom of the pan. Top with the remaining ½ tsp of granulated sugar before adding your sprinkles in one layer. Pressing the sprinkles gently to stick
Place your pan in the fridge for 30 minutes
Preheat oven to 350F and bake your bars for 25-27 minutes. The edges (that you can see under the sprinkles) will be golden, but the center will still be soft
Remove from the oven and leave to cool completely in the pan before slicing into bars
