4 Muffin Flavors from One Batter: Pumpkin, Apple, Chocolate Chip & Raspberry White Chocolate

One thing about me: I love a bit of efficiency, plus, if I have to, it’s nice to be able to cater to a variety of tastes fairly easily. This recipe makes 4 muffin flavors from one batter, perfect for holiday get-togethers, parties, or just when you need to feed a crowd.

This version transforms the base muffin batter into pumpkin streusel, apple streusel, chocolate chip, and raspberry white chocolate. Perfect for some of those cozy fall flavors!

4 MUFFIN FLAVORS FROM ONE BATTER

For these flavors, our muffin batter is a little thicker to hold up both the moisture and/or weight of the fillings so they don’t all drop to the bottom. Start by making the base, then divide it and fold in the respective flavors.

While the batter chills, make your oat streusel topping and refrigerate it so it has time to firm up before topping and baking. This bake almost feels like a magic trick, which makes it even more fun!

Why does the muffin batter need to be chilled? Chilling allows the batter time to thicken, which helps it rise vertically for those puffy muffin tops, versus spreading wider. For all my muffin top tricks, check out this video!

INGREDIENTS

  • All-purpose flour: Provides structure for the muffins and helps coat the fruit and mix-ins to reduce sinking.
  • Granulated sugar: Sweetens the muffin batter and helps make them tender.
  • Baking powder & baking soda: Provide the lift for tall, fluffy muffins and help with browning.
  • Salt: Balances the sweetness and enhances the other flavors.
  • Eggs: Bind the batter together while adding a rich structure and moisture.
  • Unsalted butter: For even more richness, moisture, and flavor in both the muffin batter and streusel.
  • Milk: Loosens the batter and adds moisture.
  • Sour cream: Makes the muffins soft by adding more moisture, richness, and tenderness.
  • Vanilla extract: Adds warmth and works to pop the flavors in the muffin batter.
  • Pumpkin puree: Adds pumpkin flavor, moisture, and color.
  • Cinnamon: Adds warmth to the pumpkin and apple muffins and the oat streusel.
  • Nutmeg & ground ginger: Add warm, slightly nutty spice to the pumpkin muffins.
  • Apples: Add fresh flavor, moisture, and a slight texture to the apple muffins.
  • Chocolate chips: Add pockets of melted chocolate to the chocolate chip muffins.
  • Raspberries: For bright, tart fruit flavor in the raspberry white chocolate muffins.
  • White chocolate chips: Add creamy sweetness that pairs with the tart raspberries.
  • Old-fashioned oats: Give texture and a little chew to the streusel topping.
  • Brown sugar: Adds sweetness and a deeper flavor to the streusel.

Don’t overmix the batter! Since you’ll mix your base and then add in your flavors, this muffin batter sees a lot of stirring. Fold in your toppings just until combined before chilling in the fridge.

HOW TO MAKE 4 MUFFIN FLAVORS FROM ONE BATTER

Start by making the base muffin batter…

Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl. In a separate bowl, whisk the eggs, melted butter, milk, sour cream, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and gently whisk until just combined, being careful not to overmix. The muffin batter should be thick with a few small lumps remaining.

Make 4 muffin flavors from one batter…

Divide the base muffin batter evenly between four bowls, about 1 cup of batter per bowl. Each portion will make three muffins, giving you four different muffin flavors from one easy batter.

For the pumpkin muffins, add the pumpkin puree, cinnamon, nutmeg, ground ginger, and flour to one bowl of batter. Gently fold until the pumpkin mixture is just combined.

For the apple muffins, toss the diced apples with the cinnamon and flour in a small bowl until evenly coated. Fold the coated apples into a second bowl of base muffin batter just until combined.

For the chocolate chip muffins, add the chocolate chips and flour to a third bowl of batter. Fold gently until the chocolate chips are evenly distributed.

For the raspberry white chocolate muffins, toss the halved raspberries with the flour to coat them. Gently fold the raspberries and white chocolate chips into the remaining bowl of base muffin batter.

Cover all four bowls and refrigerate the muffin batter for at least 1 hour. Chilling the batter helps thicken it and gives the muffins more structure, which helps create taller, domed muffin tops.

While the muffin batter chills…

Make the oat streusel by combining the flour, old-fashioned oats, brown sugar, cinnamon, and salt in a small bowl. Then stir in the melted butter until the mixture is crumbly and refrigerate until the butter firms up.

When you’re ready to bake, preheat the oven to 425°F and line every other cup of a 12-cup muffin pan with six muffin liners. Baking six muffins at a time with space between each muffin allows for better heat distribution and helps encourage a tall muffin top.

Baking your four flavors of muffins…

Remove the pumpkin muffin batter and raspberry white chocolate muffin batter from the refrigerator. Divide each batter between three of the prepared muffin liners.

Top the pumpkin muffins with half of the oat streusel and the raspberry muffins with 1 to 2 extra raspberry halves and 2 to 3 white chocolate chips.

Bake the muffins at 425°F for 5 minutes, then, without opening the oven door, reduce the temperature to 350°F and continue baking for 15 to 18 minutes. The muffins are done when a toothpick inserted into the center comes out with just a few moist crumbs.

Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. While they cool, return the oven to 425°F and line every other cup of the muffin pan with six fresh muffin liners.

Divide the chocolate chip muffin batter and apple muffin batter between the prepared liners. Press extra chocolate chips into the tops of the chocolate chip muffins and sprinkle the remaining oat streusel over the apple muffins.

Bake the second batch at 425°F for 5 minutes, then reduce the oven temperature to 350°F without opening the door. Continue baking for 15 to 18 minutes, then let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

TIPS FOR MAKING 4 MUFFIN FLAVORS FROM ONE BATTER

  1. Room temperature ingredients are key to prevent overmixing your batter! Since this recipe turns four muffin flavors from one batter, it will get mixed more than usual, so you want to prevent overdoing it.
  2. Don’t substitute Greek yogurt for the sour cream in this recipe. This muffin batter needs to be thicker to hold the weight and moisture of the individual fillings, so it needs the thickness of the sour cream.
  3. Make sure to give the streusel time in the fridge before baking, so the butter firms back up before it hits the oven. This is key so it keeps its shape on top of the pumpkin and apple muffins without melting.
  4. Before scooping the batter into the individual cups, give all except the pumpkin one fold to redistribute the fillings. This will ensure they don’t fall right to the bottom
  5. Baking the muffins in every other tin (of a 12-cup muffin pan) will help to give you those bakery-style puffs on top. 
  6. I recommend baking the pumpkin and raspberry together, since they have more moisture and take a little longer to bake than the chocolate chip and apple.

MAKING AHEAD & STORING

You can prep the muffin batter, divide, and flavor it a day in advance. Just wrap and store each flavor in the fridge until you’re ready to bake. 

Once baked, your muffins are best served at room temperature (or pop them in the microwave to serve warm). They’ll keep for up to 2-3 days at room temp or up to 3 months in the freezer.

These are great frozen and thawed as desired for breakfasts!

Ingredients

BASE MUFFIN BATTER
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder should be double-acting
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted
  • ⅔ cup milk room temperature
  • ¼ cup sour cream room temperature
  • 1 ½ tsp vanilla extract
PUMPKIN MIX-INS
  • 3 tbsp pumpkin puree
  • ¼ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp ground ginger
  • 1 tsp all-purpose flour
APPLE MIX-INS
  • 3 tbsp small diced apples use a sweet apple like Honeycrisp
  • 1 tsp all-purpose flour
  • ¼ tsp cinnamon
CHOCOLATE CHIP MIX-INS
  • 2 tbsp mini or regular chocolate chips plus extra for tops
  • ½ tsp flour
RASPBERRY WHITE CHOCOLATE MIX-INS
  • 3 tbsp halved raspberries plus extra for top
  • 1 ½ tbsp white chocolate chips plus extra for tops
  • 1 ½ tsp flour
OAT STREUSEL
  • 3 tbsp all-purpose flour
  • 1 tbsp old-fashioned oats
  • 1 ½ tbsp brown sugar
  • ¼ tsp cinnamon
  • Pinch of salt
  • 1 tbsp unsalted butter melted

Instructions

  • To make your base muffin batter, whisk together the flour, sugar, baking powder, baking soda, and salt in a bowl
  • In a separate bowl, whisk eggs, melted butter, milk, sour cream, and vanilla until smooth
  • Pour wet ingredients into the dry ingredients and whisk gently until just combined — don’t overmix! The batter will be thick with a few small lumps
  • Divide the batter evenly into 4 bowls (about 1 cup of batter per bowl). Each bowl will make three muffins
  • For the pumpkin muffins, in one bowl, add the pumpkin puree, spices, and flour, folding in until just combined
  • For the apple muffins, in a new bowl, toss the diced apples with the cinnamon and flour to coat, before folding into one of the prepared bowls of base batter
  • For the chocolate chip muffins, fold in the chocolate chips and flour just until combined
  • For the raspberry white chocolate muffins, toss the raspberries in a bowl with the flour to coat, then fold into the remaining bowl of base batter along with the white chocolate chips
  • Cover all four bowls and place in the fridge for at least an hour. This will thicken the batter to help provide structure for those domed muffin tops
  • While the batter is in the fridge, make your oat streusel by combining the flour, oats, brown sugar, cinnamon, and salt in a bowl. Then stir in the melted butter until you have a crumbly mixture. Place in the fridge to firm up the butter
  • Preheat oven to 425°F and line every other cup of a 12-cup muffin tin with muffin liners. Bake 6 muffins at a time, for maximum heat distribution, to help with the final puff
  • Remove your pumpkin muffin and raspberry white chocolate muffin batter from the fridge
  • Split each of your batters between the six muffin liners – 3 per flavor. Top your pumpkin batter with half of your oat streusel and top your raspberry muffin batter with 1-2 extra raspberry halves and 2-3 white chocolate chips
  • Bake for 5 minutes, then without opening the oven, drop the temperature to 350°F and bake for an additional 15-18 minutes until a toothpick inserted comes out with just a few moist crumbs. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely
  • Return your oven to 425°F and re-line your muffin pan, every other cup for a total of 6 muffin liners
  • Divide your chocolate chip muffin batter and apple muffin batter between the liners. Then press some extra chocolate into the tops of the chocolate muffin batter and the remaining streusel on top of the apple batter
  • Place in the oven and bake for 5 minutes, drop the temperature to 350°F, and bake for an additional 15-18 minutes. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely

Notes

*I do not recommend substituting Greek yogurt for sour cream in this recipe. Sour cream is significantly thicker, which is important in keeping your fillings from falling to the bottom.
*For the apple muffins, dice your apples into roughly ¼”-inch cubes.
*I used fresh raspberries for this recipe. You can use frozen, but wait to toss them with the flour and fold them in with the white chocolate until after the batter has chilled and you’re ready to bake. You want the berries to go into the oven frozen!
*I recommend baking the pumpkin and raspberry muffins together, and the apple and chocolate chip muffins together, since the pumpkin and raspberry have a little more liquid and need an extra minute or two to bake over the other two
