One-Ingredient Apricot Glaze Recipe — Quick & Simple Pastry Glaze

This one-ingredient apricot glaze recipe is one of my favorite baking hacks. Honestly, it might be my favorite of them all.

I first learned about this trick while in pastry school in Scotland. We used a jam-like ingredient (that I can’t remember the name of), but I asked the chef for a sub if we didn’t have that back home. His answer: apricot jam. And I’ve been using it ever since!

This trick works perfectly on a simple peach galette or brushed across these baked apples in my apple streusel pie!

ONE-INGREDIENT APRICOT GLAZE

I always keep a jar of apricot jam in the fridge, just for this. The apricot jam is very mild in flavor, so it won’t overshadow your dessert, just a little sweet bite. But, you can absolutely sub in your preferred jam if you want flavor and gloss (say a little raspberry to spread across a fruit tart?)!

It’s a quick and easy way to add a sweet, glossy finish to anything from an open-faced apple tart to a croissant.

Where can I use an apricot glaze? It’s the perfect finishing touch brushed atop freshly baked croissants (adding a sweet flavor), fruit inside a tart, and other assorted breads and pastries where you want a little extra glossy shine.

INGREDIENTS

  • Apricot jam: easy to cook down to provide a neutral, lightly sweetened gloss
  • Water: If needed, to loosen the jam into a more brushable consistency

Can I save apricot glaze? Of course! The glaze will thicken back up as it cools, so simply reheat to loosen when needed.

HOW TO MAKE APRICOT GLAZE

Simply add a spoonful of apricot jam to your pot and place it over low heat. As the jam begins to cook, it will loosen, so stir occasionally to prevent it from burning or sticking to the pan.

If needed, you can add a splash of water to your pot to further loosen your jam. Sometimes, for say a croissant, you want a very thin layer, whereas for topping a fruit tart, it’s ok if it’s thicker.

Once ready, remove from heat, and you’re ready to use this apricot glaze recipe! Grab a pastry brush to gently spread along the tops of your bakes!

TIPS & VARIATIONS

  1. Keep an eye on this apricot glaze recipe as it cooks down. You don’t need to stir it contiously, but you will want to occasionally, to prevent it from burning or sticking to the pot.
  2. Add a little water to thin out your glaze if necessary. Just a teaspoon at a time, until you get your desired consistency.
  3. If you don’t use up all of your glaze, you can store in the fridge. Know that it will firm back up as it cools, so you will need to re-heat to loosen back up.
  4. Apricot makes for the perfect nuetral (but sweet) glaze. If you want a gloss with a specific flavor, feel free to sub in your preferred jam!

STORING APRICOT GLAZE

If you make more than you use, place your apricot glaze in a container and keep it in the fridge. As it cools, it will firm back up, so you will need to reheat it to use again.

*If your glaze appears too thick still, add about a teaspoon of water at a time to the pot while you stir, to help loosen and thin out the glaze
