
Chewy Oatmeal Cookie Bars with Brown Sugar Glaze
There are many things that I was never into as a kid, that now adult me really gets on with, like oatmeal in cookies and toffee flavors. These chewy oatmeal cookie bars have that perfect bite that only oatmeal can provide, plus the brown sugar glaze on top brings this salty sweet toffee-ness that I truly cannot get enough of.
An added delight is that this recipe is baked in a loaf pan. Which, can I just say, I absolutely love a loaf pan.

CHEWY OATMEAL COOKIE BARS
The cookie dough for these bars comes together really simply, with your basic pantry staples. The dough itself is a little stiffer, so instead of trying to smear it into your pan with a spatula, I like to wet my fingertips to press it into an even layer.
For the glaze, you’ll melt your brown sugar with your butter in a pot (this is what gives those toffee flavors!!) before whisking in the remaining ingredients. The key is leaving your glaze to set completely, over the bars in the pan, before removing them from the loaf tin, so you get clean cuts and a glaze that stays put.
My cookie dough seems dry. What should I do? I like to fold and smear the dough, as I combine, to help that butter blend and absorb those dry ingredients. Oftentimes the dough isn’t dry, it just needs a little more mixing.


INGREDIENTS
- Unsalted butter: For a rich buttery texture int the oatmeal bars and a smooth base for the glaze.
- Light brown sugar: Sweetens the bars while adding moisture and a toffee-like flavor to the glaze.
- Egg yolk: Binds the ingredients together and helps create a rich, chewy texture.
- Vanilla extract: Enhances the buttery, brown sugar flavor.
- Old-fashioned rolled oats: Gives that perfect oatmeal chew.
- All-purpose flour: Provides structure while keeping the bars tender.
- Baking soda: Helps the cookie dough spread and lightly brown along the edges as they bake.
- Salt: Balances the sweetness and enhances the other flavors.
- Milk: Loosens the glaze to a pourable consistency.
- Powdered sugar: Thickens and sweetens the brown sugar glaze for a smooth finish.
Is there a way to soften butter quickly? Yes! Cut your butter into tablespoon-sized pieces, lay on a plate, and pop in the microwave for 8-10 seconds before flipping and repeating until the butter is just softened for a knife to press through while holding it’s shape.
HOW TO MAKE OATMEAL COOKIE BARS
Grease a 9×5-inch loaf pan and line it with parchment paper, leaving some parchment hanging over the sides for easy removal. This recipe uses a loaf pan to create thin, chewy oatmeal cookie bars, so the parchment paper will make it easy to lift them out, slice, and serve!
Prepare your chewy oatmeal cookie dough…
In a mixing bowl, beat the softened butter and light brown sugar together until well combined. Add the egg yolk and vanilla extract, then mix until smooth.
Add the old-fashioned rolled oats, then sift in the flour, baking soda, and salt. Fold the dry ingredients into the butter mixture, smearing the dough together as you fold, until everything is just combined.
Chill and bake your homemade cookie bars…
Press the oatmeal cookie dough into an even layer across the bottom of your lined loaf pan. Lightly wet your fingertips with water to make it easier to press into an even layer.
Refrigerate the dough for 20 minutes to chill it before baking. Meanwhile, preheat your oven to 325°F.
Bake the oatmeal bars for 14–16 minutes, or until the edges look just set and are faintly browned along the very edge. Be careful not to overbake them, as the bars will continue to set as they cool and you want them nice and chewy!
Remove the pan from the oven and let the bars cool completely in the pan.
Make your brown sugar glaze…
Add the butter and light brown sugar to a small pot and place over medium-low heat. Stir regularly until the brown sugar has completely dissolved, then remove the pan from the heat.
Stir in the salt, vanilla extract, and milk, then whisk in the powdered sugar until you have a thick, smooth glaze.
Spread the brown sugar glaze over the cooled bars in an even layer, then let it sit until the glaze is dry to the touch. This should take anywhere from 20-30 minutes.
Once set, use the parchment paper to lift the bars from the loaf pan, slice, and enjoy!

TIPS & VARIATIONS
- As it stands, I’m not a fan of traditional oatmeal cookies with their raisins and spices. That being said, you could absolutely add some cinnamon to these bars if you’d like. I find the buttery flavors on their own here perfection.
- The dough is thicker for these bars, so don’t fret if you have trouble spreading it into your loaf pan. I find that wet fingers work best to smear the dough into an even layer.
- Be careful not to overbake these oatmeal cookie bars! You want them just ever so slightly golden along the edge of the pan, as they will continue to set as they cool.
- When whisking your brown sugar and butter over heat, it may bubble a little as you melt that sugar. At that point, your sugar has likely dissolved, but just be careful not to heat it too long or you’ll change the final set of the glaze once it’s cooled.
STORING THESE OATMEAL COOKIE BARS
These are best enjoyed at room temperature, where they will keep in an airtight container for up to 4 days. You can also store them in the fridge for up to a week or freeze them for 2-3 months!

- Preheat your oven to 325°F
- Bake your bars for 14-16 minutes, until the edges look just set and faintly browned along the very edge
- Remove from the oven and leave the bars in the pan until completely cool
- For the glaze, in a pot add the butter and brown sugar and place over medium-low heat. Stir regularly until the sugar has full dissolved, then remove from the heat
- Stir in the salt, vanilla, and milk, then whisk in the powdered sugar until you have a thick glaze
