How to Make Chocolate Chip Waffles for One (No Egg Needed!)

One of my earliest childhood memories is getting up and making waffles on Saturdays. I did it so often that I had the recipe memorized even years later. Now I love a plain homemade waffle – no maple syrup, no powdered sugar, just straight waffle. To me, that’s the sign of a good bake, when it needs nothing extra to be delicious. 

That being said, I do love a chocolate chip situation. However, I am finding that as I get older, there are many flavors that I wouldn’t have liked when I was younger, but I really love them now (like these Portuguese custard tarts). Since these waffles are just for one and nobody is going to ruin your jam with their own requests, we’re sprinkling in some chopped chocolate for an extra delicious bite. You’re welcome to add extra toppings, but these are delicious as they are for me.

SINGLE-SERVE CHOCOLATE CHIP WAFFLE with NO EGG

The trick with single-serve recipes is using exact measurements. You’re making a very small batch recipe, so every teaspoon, pinch, and cup matters. When making something like waffles, which usually requires an egg, you often find recipes that need a partial egg. This means you have to crack, whisk, and measure out only some of an egg while hoping you remember it (and it’s still good) the next time you want an egg for breakfast. By using ground flaxseed in this waffle recipe, not only can you measure out just what you need with no potential waste, but you also get the added nutritional benefit of adding a seed to your breakfast. 

This recipe uses a flax “egg” to make two chocolate chip waffles, just for you. The waffles themselves are sized just shy of full waffle iron waffle, making them the perfect serving for one. Plus, we’re going to lightly chop our chocolate, so we get all the big and minuscule bits of chocolate dispersed throughout!

What is flaxseed? It is a seed providing a great source of fiber and oil (as well as antioxidant properties) that comes from the flax plant. For this recipe, we use ground flaxseed, but you can find it whole or in oil form too. Heads up: refrigerate your ground flaxseed once it’s open!

INGREDIENTS

  • Water – The base for your flax egg
  • Ground Flaxseed – Used as an egg substitute to bind your ingredients and give you a nutritional boost
  • Flour – Provides structure to your waffle
  • Baking Powder – Gives these a delicious little puff
  • Salt – Just a little to balance flavors
  • Milk – Adds moisture and helps bring the ingredients together
  • Canola Oil – Another moisture hit for nice and soft waffles
  • Semi-Sweet Chocolate Chips – Lightly chopped for a little chocolatey hit in every bite

How do I prevent the chocolate from burning in my waffle iron? Reserve a little of the waffle batter after each pour, around ½ tsp. Use it to cover the exposed bits of chocolate after you add it to your waffle batter in the iron. This will cover the chocolate, protecting it from the direct heat of the iron when you close it to cook your waffle.

HOW TO MAKE CHOCOLATE CHIP WAFFLES FOR ONE

First, you’re going to make your flax egg. In a small dish, mix your water and ground flaxseed, and set aside for 5 minutes. You’ll notice at first that the mixture is runny, but it will thicken as it sits. 

In a separate bowl, combine your dry ingredients – flour, baking powder, and salt – before mixing in your oil and milk. Stir in your set flax egg, just in until everything is combined. Place your chocolate chips on a cutting board and give them one to two quick chops. Set aside.

Plug in your waffle iron to get it hot. Once ready, grease with cooking spray if you need to before pouring in half of your batter, saving a little extra to cover your chocolate chips. Sprinkle half of your chocolate chips over your batter, and spoon that little extra batter over the exposed chocolate to prevent it from burning in the iron. Close and cook your waffle. Once ready, remove and repeat these steps with the rest of your waffle batter and chopped chocolate chips.

TIPS & VARIATIONS

  1. Save a little bit of batter for each waffle, to spoon over the chocolate pieces so they don’t leave behind chocolate residue on your waffle iron and potentially burn
  2. Make sure you are using ground flaxseed for this recipe!
  3. Depending on your waffle iron, when mine alerts me that the waffle is baked, I usually wait an extra 15-30 seconds before I open the iron for an extra golden finish. Then I remove my waffle and repeat with the next one.
  4. I love my waffles just as they are, but this would also be delicious topped with fresh fruit and/or whipped cream

MAKING AHEAD & STORING

You can make your waffle batter up to a day in advance, leaving the chocolate out of it. The waffles themselves are best as soon as they are made, as they will soften and lose their texture the longer they cool.

Ingredients

  • 1 ½ tbsp water
  • 1 ½ tsp ground flaxseed
  • ¾ cup flour
  • 1 ⅛ tsp baking powder
  • tsp salt
  • ½ cup milk
  • 1 ½ tbsp canola oil
  • 1 tbsp semi-sweet chocolate chips

Instructions

  • In a small dish, mix your ground flaxseed and water. Set aside and let sit for 5 minutes
  • In a separate small bowl, combine your flour, baking powder, and salt. Then mix in your milk, oil, and flaxseed mixture. Stir until just combined
  • Plug in your waffle iron and get it hot
  • While your iron is heating, give your chocolate chips one to two quick chops on a cutting board, just to break them down a little. This will give you extra chocolatey goodness throughout your waffle
  • When your iron is hot, grease it if needed and then pour half of your waffle mixture into the center of your iron and sprinkle with half of your chopped chocolate (including any small bits!). Reserve a little of your batter to lightly cover the bigger bits of chocolate, so you don’t get chocolate all over your iron. Close the lid and allow to bake until done
  • Remove the waffle with a fork, place it on a plate, and repeat with the second half of your batter
  • Serve as is or with fresh fruit and enjoy!
